EveryBuddie Loves Pearce's Sweet Corn!!
Pearce's Farm Stand in Walworth, Wisconsin has the best sweet corn, and everybody loves it! Especially our 9-year-old Black Lab named Buddie. She will eat every last kernel of corn off the cob and she even does it the proper way, according Bob Pearce Jr. He says that 'Sweet corn grows in rows, therefore it should be eaten in rows'.
It's so good, there is really no wrong way to eat it! If you love Pearce's Sweet Corn as much as Buddie, I suggest freezing a little to enjoy over the winter. Here are some tips for freezing sweet corn:
1) It is best to get fresh sweet corn (and since Pearce's picks it fresh every morning you know its fresh) and try to freeze it that same day. (It still works if you do it a day or two later but you get the best results when it is done the same day it is picked).
2) Begin by boiling a large pot of water.
3) While you are waiting for the water to boil peel the husks off your sweet corn.
4) Once your water is at a rolling boil place your sweet corn in the water carefully.
5) Blanch the sweet corn by placing it in the boiling water for 2 minutes. Then remove it from the water with tongs so you can re-use the water for the next batch.
6) Cool the corn in an ice water bath.
7) Use a knife (I like to use my electric knife to save time and my energy) to shave the kernels off the cob.
8) Put shaved kernels in a freezer safe bag, squeeze the excess air out of the bag, seal the bag tightly, label the bag, and place it in the freezer.
Then, when you have a craving for Pearce's Sweet Corn as a side dish or added into your chili, simply pull the bag out, add it to your chili as is or boil it for 8 minutes, serve and enjoy!
